For July 4th we decided to close the restaurant for the day so that all staff can have a day off. With that in mind, we also decided to buy a toy. A big kitchen toy that’s about the size of a tub and pretty much looks like one too.Yep, it’s a pig roaster (shown above). This contraption can roast up to 100 pounds of pork and requires the use of charcoal. We’ll also be using wood chips. According to the directions, we will have a feast after four hours. Now, the big question. What sauce to serve with our pork? Our brine is going to be very simple. Felipe is talking about making a mustard-based BBQ sauce. Sounds delicious. But I love the idea of having more than one sauce. Maybe an soy-based one or a citrusy sauce. Regardless, who has a favorite homemade BBQ sauce they would like to share?
