Super-Fast Healthy Desserts

As I mentioned in my recent blog about brain food, dark chocolate is my favorite treat. So I was feeling pretty desperate the other night when I had a major craving with no chocolate bars in the house and pouring rain (and a touch of laziness) keeping me from dashing to the deli. I scrounged around my cabinets and turned up some cocoa powder (Valrhona 100% cacao), which I blitzed in the blender along with a banana, some almond milk, and yogurt for an almost-instant chocolate smoothie. It was slightly chalky but completely tasty and definitely took care of my craving. But when the smoothie really got special was when I turned the leftovers into chia pudding (pictured). Certainly less instant, but it had the texture and flavor of a “real” dessert. Searching Epicurious’ recipe database, I found dozens more quick, easy, and healthy dessert recipes to try. I’ve already done a riff on this Peanut Butter, Chocolate, and Banana Fro-Yo (I use 2% plain yogurt and add vanilla extract instead of using nonfat vanilla yogurt, and I don’t bother to freeze the yogurt first, but instead stick the concoction in the freezer briefly after blending and putting it in a bowl).
