Perhaps it’s because it’s the dog days of summer. Maybe it’s because it’s 90 degrees today in New York City. Or, maybe it’s because I don’t allow myself to eat it very often. Whatever the reason, I am craving a slice or three of an ice cream cake. Often the go-to for a child’s birthday party, ice cream cakes look like real showstoppers but are easy to make, relatively inexpensive, and fullfill about every dessert wish and desire–at least for me. All it really takes is a moment of assembly and a few hours to let it set. From a Strawberry and Chocolate Baked Alaska to a Chocolate Chip and Banana Ice Cream Sandwich (pictured above), you just need some inspiration–use any ice cream, fruit, chips, cookies, and cake that you have lying around, although why you would have not eaten it all already, I can’t say–some paper towels, an ice cream scooper, and some room in your freezer.
