4 tablespoons Olive oil Emeril's Essence
1 pound Hen gizzards
3 cups H2o
2 tablespoons Flour
1 pound Floor pork

4 cups Cooked white rice

In Sauce Piquant recipes which are integrated in this collection. Preheat the oven 400 degrees. Rub the entire rooster with 2 tablespoons
olive oil and season with Emeril's Essence. In a saucepan, boil the gizzards, coated with water for about 1 hour or until they are tender. Drain the gizzards and reserve the liquid. In a meals processor, finely chop the gizzards. In a significant saucepan, mix 2 tablespoons of the oil and the flour in excess of the heat. Cook the combination for 8 to 10 minutes, for a dark roux, stirring consistently.
Increase the pork to the roux and cook for 5 to 6 minutes, stirring constantly. Increase the onions, bell peppers, and celery and prepare dinner for about 5 to 6 minutes, or right until the veggies are wilted. Increase the chopped gizzards. Pour the remaining liquid into a 1-cup measuring cup. Make up the change with drinking water. Insert the liquid to the pot.
Mix in the cooked rice, stirring to coat evenly and split up any lumps. Increase the inexperienced onions and parsley. Year with salt and cayenne. Allow the mixture to amazing.
