For Epicurious’ eighth Doable Challenge: Make Small Changes for Big Results, we joined up with registered dietitian, author, and TV host Ellie Krieger, whose approach to healthy eating lines up very nicely with the idea behind The Year of Doable Challenges: food that’s good for you can (and should!) be delicious and easy to prepare. Over the coming weeks, we’ll be tackling five healthy eating initiatives, with tips and recipes from Krieger to help with each: 1. Eat More Fruits and Vegetables 2. Drink Your Water 3. Switch to Lean Meats 4. Eat Nuts, Seeds, Beans, and Soy 5. Switch to Low-Fat Dairy To prepare for the challenge, check your pantry and then head to the store for healthy staples, such as fresh fruits, vegetables, and herbs (see what looks good at your farmer’s market or grocery store); onions, garlic, and other aromatics; beans (canned or dried); nuts and seeds; low-fat or nonfat milk and yogurt; healthy oils (such as olive and nut oils) and vinegars; whole-wheat pasta and other whole grains; lean meats and poultry; and dried spices such as cayenne, paprika, and mustard powder. Then get ready to up your produce starting on Monday (sooner if you’d like, of course!).
